Type of Wine: Dry White
Vintage: 2019
Variety: Macabeo, exclusively grown at Vinya Gran.
Plantation: Traditional bush-trained vines. Plantation year approximately 1908.
Location: Pre-littoral depression of Penedès, at 214 meters altitude.
Soil Type: Calcareous, with medium acidity, deep, well-drained, and loamy texture.
Orientation: Northeast-southeast.
Slope: Flat and sinuous.
Viticulture: Organic and regenerative, with a yield of less than 4,500 kg/ha.
Harvest: Third week of September, handpicked with cluster selection and in 15-kilo boxes. Cooling of the grapes in the vineyard.
Pressing and Maceration: Second cluster selection at the winery, destemmed and crushed without oxygen, with the addition of dry ice to lower the temperature. Skin maceration in the press with dry ice and without oxygen.
Fermentation: 50% in French oak barrels with fine grain and medium plus toasting, and the rest at low temperature in stainless steel tanks.
Aging: Minimum of 12 months on lees. 50% in 300-liter oak barrels with weekly battonage. In May, 900 liters from the stainless steel tank were transferred to oak casks that had previously contained Xarel.lo to refine and add complexity.
Climatology (Vintage 2019): Overall warm and dry year, with some cooler weeks in late winter and early spring. Heat peaks in July and August, with a hot and dry summer and high solar radiation.
Visual Analysis: Powerful yellow color with a significant presence of golden tones.
Olfactory Analysis: Complex aromas from extended aging on lees, reminiscent of yeast, brioche, aniseed, and coconut. Deep notes of candied fruit such as apricot and peach, combined with barrel aging aromas like toffee, licorice, and incense.
Gustatory Analysis: The intense work with fine lees brings notable differences: flavorful, dense, with a long and very persistent aftertaste.

3rd week of September. Hand-selected bunches of grapes in a 15 kg box. Refrigeration of the grapes in the vineyard.
- Pressing and maceration
Second selection of bunches in the winery, destemming and crushing without oxygen and with the addition of carbonic snow to lower the temperature. Pellicular maceration in press with carbonic snow and without oxygen.
- Fermentation
50% in fine-grained, medium-plus toasted French oak barrels and the rest at low temperature in stainless steel vats.

Good aromatic power where the fresh aromas of Mediterranean herbs (St. John’s wort, lavender and mint) combined with the aromas of white pulp fruit (apple and pear) and citrus fruits stand out. After a short time, sweet notes of vanilla, clove and dried fruit appear.

On the palate, it has a pleasant, sweet entry with a very good balance of flavour provided by the alcohol and acidity. Persistent and dense, it finishes with a slightly bitter finish that lengthens the aftertaste in the mouth.
