This Crianza wine, aged for a minimum of 8 months on its lees, reflects the craftsmanship of our winemaking process. Thirty percent of the wine rests in 300-litre barrels of fine-grained, lightly toasted French oak, while the remaining 70 percent is kept in stainless steel tanks and pumped over using a nitrogen lance. Experiencing a warm and dry climate, with cooler weeks in late winter and early spring, followed by hot spikes in June and July, and a hot and dry summer with high solar irradiation.
The 2021 vintage, marked by late bud break and moderate growth, resulted in active development during the spring with adequate flowering conditions. Although the increased temperature accelerated ripening, careful monitoring allowed the grapes to be harvested on time, achieving outstanding freshness and acidity. The visual colour reveals lemon yellow tones with pale green reflections.
The aromas are a powerful combination of fresh Mediterranean herbs (St. John’s blossom, lavender and mint), white-fleshed fruits (apple and pear) and pale citrus notes. Over time, sweet hints of vanilla, clove and dried fruit emerge. On the palate, it has a pleasant, sweet entry with an exceptional balance between alcohol content and acidity. Persistent and dense, it culminates in a slightly bitter finish that prolongs the delight on the palate.

Description
Vintage 2021: A very special year, marked from beginning to end by a late bud break, followed by moderate but always active growth during the spring, favoured by scarce and timely rainfall in April and May; a flowering period suitable for a good fruit set.
Later, the considerable increase in temperature led to an acceleration of ripening.
As a result, the size of the shoots was between 80 and 110 cm, ideal to nourish the grapes in a balanced way, which, with good fertility, gave an average of 1.12 grapes per shoot. Field work has been adapted to the conditions of the year, green pruning has been gentle, protecting the grapes from damage due to successive heat waves.Very shallow ploughing of the soil to maintain maximum moisture available to the plants. Although the ripening process was advanced, we can say that fortunately, having followed it with great constancy allowed us to harvest the grapes on time with outstanding freshness and acidity.
The flowering period was also respectful with good fruit set.

- Harvest
4th week of September. Hand-selected bunches of grapes in a 15 kg box. Refrigeration of the grapes in the vineyard.
- Fermentation
30% in French oak barrels and 70% at a low temperature in stainless steel tanks.

Minimum of 8 months on its lees. 30% in 300 litre barrels of fine-grained, lightly toasted French oak. Battonage every week and 70% in stainless steel tank with pumping over with nitrogen lance.

Lemon yellow colour with pale green hues and reflections.

Good aromatic power where the fresh aromas of Mediterranean herbs (St. John’s wort, lavender and mint) combined with the aromas of white pulp fruit (apple and pear) and citrus fruits stand out. After a short time, sweet notes of vanilla, clove and dried fruit appear.
