Discover our 2020 Brut cava, a sublime expression of the Xarel.lo, Macabeo, Parellada and Chardonnay varieties!
Sourced from vineyards located at different altitudes and orientations, we cultivate with ecological and regenerative practices to obtain grapes of exceptional quality.
With a meticulous harvest and innovative techniques, we achieved a pellicular maceration in press with carbonic snow and a low temperature fermentation in stainless steel tanks. The minimum ageing of 36 months in the bottle adds complexity and elegance.
The 2020 vintage, marked by special conditions, challenged us with late bud break and heat stress. However, thanks to precise care and gentle green pruning, we were able to maintain the balance and obtain an exceptional ripening.
This cava presents itself visually with a good layer of pale yellow colour and golden reflections, accompanied by a fine and persistent bubble. In its olfactory profile, notes of candied fruit, quince jelly and hints of pastry and balsamic notes stand out.
On the palate, the long ageing gives it breadth, density and remarkable structure, offering a long and persistent experience. Serve this cava between 6º and 8ºC to fully enjoy its nuances, and accompany any occasion, from fish and salads to red meats and mild stews.
