Plantation year approximately 1908.<\/p>\n<p><strong>Location:<\/strong> Pre-littoral depression of Pened\u00e8s, at 214 meters altitude.<\/p>\n<p><strong>Soil Type:<\/strong> Calcareous, with medium acidity, deep, well-drained, and loamy texture.<\/p>\n<p><strong>Orientation:<\/strong> Northeast-southeast.<\/p>\n<p><strong>Slope:<\/strong> Flat and sinuous.<\/p>\n<p><strong>Viticulture:<\/strong> Organic and regenerative, with a yield of less than 4,500 kg\/ha.<\/p>\n<p><strong>Harvest:<\/strong> Third week of September, handpicked with cluster selection and in 15-kilo boxes. Cooling of the grapes in the vineyard.<\/p>\n<p><strong>Pressing and Maceration:<\/strong> Second cluster selection at the winery, destemmed and crushed without oxygen, with the addition of dry ice to lower the temperature. Skin maceration in the press with dry ice and without oxygen.<\/p>\n<p><strong>Fermentation:<\/strong> 50% in French oak barrels with fine grain and medium plus toasting, and the rest at low temperature in stainless steel tanks.<\/p>\n<p><strong>Aging:<\/strong> Minimum of 12 months on lees. 50% in 300-liter oak barrels with weekly battonage. In May, 900 liters from the stainless steel tank were transferred to oak casks that had previously contained Xarel.lo to refine and add complexity.<\/p>\n<p><strong>Climatology (Vintage 2019):<\/strong> Overall warm and dry year, with some cooler weeks in late winter and early spring. Heat peaks in July and August, with a hot and dry summer and high solar radiation.<\/p>\n<p><strong>Visual Analysis:<\/strong> Powerful yellow color with a significant presence of golden tones.<\/p>\n<p><strong>Olfactory Analysis:<\/strong> Complex aromas from extended aging on lees, reminiscent of yeast, brioche, aniseed, and coconut.
